I've just purchased an oak vanity unit which will have a top mounted basin. I need to protect the top from water so need to select a relevant varnish.

Can anyone recommend one please, ideally with a matt finish?

Deffo this, I have an oak cabinet with top mounted basin and gave the whole cabinet 2 good coats of yacht varnish,still looks as good as the dday it was installed (approx 4 years ago)

Rustins works for me. I'd avoid cheap own-brand offerings.

Sand the wood as smooth as you can get it and wipe the dust off with a rag dipped in meths (simply because meths dissolves grease and doesn't leave a residue)

Allow the first coat to dry hard - might take a few days. This is effectively a grain filler and primer. Then smooth with wet/dry paper, wipe clean again with a meths rag and apply the second coat. See what you think; you can always do a third coat to increase protection. Dodge your head around to catch the surface in the light to make sure it's as good as you can get it - watch for runs and smooth them out quickly.

If you get it right it will look almost as good as a sprayed finish.

My refurbishment is due for completion in early Feb so have time to get the varnish done.
